Pesto Mushroom Toast

Are you a pesto sauce lover? If you are, you will simply love this version of the pesto sauce, and if you are not,…………… you will still love this version 🙂

I found inspiration to make this quick fix from another dish I tasted a few weeks back, however I did customise it.

This is the simplest way one can ever fix a meal. One meant for those lazy days when you have to drag yourself into the kitchen. I had that feeling yesterday and therefore this fix.

 

From your kitchen

Bread slices (I used multigrain, you can use any that you have)

Pesto sauce (I’ve used the ready sauce jar, you can choose to make it fresh)

Fresh Mushrooms (sliced vertically)

An Onion (chopped fine)

Herbs to taste

Grated Cheese (optional, I chose not to use it)

Spinach leaves (finely chopped, optional, I chose not to use it)

Take the sliced mushrooms and finely chopped onion and sauté it together till the water evaporates and the mushrooms are slightly done. If you are using spinach you can add in the chopped spinach leaves at this stage. Just before turning the heat off, add in the herbs and give it a good mix.

Preheat your oven for 10 min.

Lay out the bread slices, take a spoonful of pesto sauce and spread it on it. Take a spoonful of mushrooms and spread it over the sauce. Top it with grated cheese, if you prefer using it. Lay them all on the baking tray and put it in the oven till slightly toasted, or till the cheese melts.

Viola! You have your quick meal ready to be served.

 

Serve it with a soup as a side, or for breakfast with an egg, or just as a simple quick dinner with or without a salad on a weekend movie night.
