Spinach n Cottage Cheese Bites

It is wonderful to be back connecting with you guys. I know it has been a while since we’ve visited here, and from then to now, the World has changed!

Will it ever be the same again? Is a question I often find myself struggling with.

Anyway this too shall pass!

No matter which part of the World we are in currently, we are all home bound (well most of us are). So let’s try and do fun things, new things and things we don’t find much time for otherwise.

Today I’m sharing my own recipe. Since my family loves cottage cheese I’m constantly looking for newer ways to cook with it. Spinach and cottage cheese together make a fabulous combination with spinach lending the colour and cottage cheese the flavour. Not the other way round mind you…. 🙂

 

Most children love cottage cheese and mommies love it too as it provides the necessary nutritional value. So here goes my quick to bake, simple to put together and yummy to eat spinach and cottage cheese bites recipe.

From your Kitchen

Outer crust

Refined flour (maida) (2 cups)

Cooking Oil (2 teaspoon)

Salt to taste

Baking soda (1 teaspoon)

Mix these together and using very little water to make a semi soft dough, not sticky. Wrap it in a plastic film and refrigerate it for a minimum of 20 min. Now you can put the stuffing together or then make the dough beforehand and refrigerate it for later use.

 

Stuffing

Cottage cheese (crumbled)

Spinach leaves (finely chopped)

Cheese a little (I used grated mild cheddar, you can use any kind you like)

Salt to taste

Mixed herbs  (or chaat masala-an Indian spice mix) to taste

Mix all the above ingredients together in a bowl and keep aside.

Preheat your oven for 15-20 min on 200deg centigrade.

Now grease your board a little bit, take a bit of the dough and roll it out into a big circle. Using a pizza cutter cut out triangles evenly. Place a spoon of the stuffing on the broad end of each triangle and roll it down all the way till the narrow point and seal the point. Continue making these and place them in your baking tray. Once all are made, brush them with some cold milk and place the tray into the oven to bake.

Hot and piping little rolls in no time.

 

And trust me, they get gobbled up in a jiffy by our little munchkins, mine sure did!

Which is why, these are great for snack boxes on school days, as sides with a hot soup or generally as a snack when you don’t have much time to prepare.
